MY FAVORITE CHILI RECIPE
My Favorite Chili Recipe:
very bean heavy!
some combination of: kidney beans, garbanzo beans, adzuki beans, black beans and orange lentils
chopped onion
tomatoes (heirloom ideally)
green pepper diced
red pepper diced
chili pepper (to taste)
cayenne pepper (to taste)
cumin 1 tbsp or more
himalayan salt -pinch
vegan orange OR white cheese (brand recommended: follow your heart)
vegan sour cream
baby carrots chopped
simmer in pot for up to 2 hours and 15 minutes
put a dollop of vegan sour cream mixed with cumin on top
with grated vegan cheese
sometimes i throw in tortilla chips for fun, to add an extra crunch.
optional: add quinoa or wild rice. cook separately then simmer inside chili for 10 minutes.
